Mexsu – Mexican Sushi Restaurant

You read that right! Mexican and Sushi combined! If you’re driving through northeastern Colorado, you might be expecting to find Mexican restaurants, as Colorado is famous for its killer Mexican food. But you would NEVER expect to find a fusion eastery pulling together Hispanic cuisine and Asian fare.

Yet, nestled in a cute establishment on the main street of Yuma, Colorado, Mexsu provides an unexpected surprise to any weary traveler or adventurous foodie.

I selected two dishes:

CULICHI: a tempura fried sushi roll with shrimp, beef, melted cheese, serrano, bacon & crab meat

STEAK VAMPIRO: a fried crunchy cheese & steak taco with guacamole, pico de gallo& pickled onions

Plus, I had to have some of their horchata, a popular rice, milk, vanilla, and cinnamon drink.

I will go out of my way to end up in Yuma again, just to eat here! It is 100% worth the drive to eat at this amazing and unique restaurant.
