While I was falling in love with my new nomadic lifestyle, leaving my sons behind was hard. They are both well on their way to being successful adults, but I knew that the coming months without physically hanging out with them would be tough.

So, we grabbed one more dinner together at Birriería Doña María Longmont.

If you ever find yourself there, you MUST try the Mexican Pizza!

At a Farewell Dinner near St Vrain State Park, a plate of birria pizza is topped with onions, cilantro, radish slices, and shredded meat. A bowl of red consommé sits in the center, with tortilla chips and a guest in blue in the background.

And of course, a marg always goes well with some spicy grub.

A large margarita glass with a chili powder rim and lime wedge, filled with a light green drink and ice, sits on the table during a Farewell Dinner. A red straw stands out as condiments, a mirror, and yellow ceiling decor complete the restaurant scene.
A pink slushy drink with ice is served in a curvy glass with a blue rim and tall red straw, perfect for a Farewell Dinner. The restaurant’s green walls, booths, hanging lights, and colorful decorations set the mood.

And you can never go wrong with some fried ice cream!

At a farewell dinner, a person in a blue shirt enjoys fried ice cream with whipped cream and chocolate sauce on a white plate. The dessert features a crispy shell and vanilla ice cream inside, set against a reddish-brown background.

The next morning, I hit the road heading south on I-25 with plans to stay somewhere in southern Colorado.

However, the weather was just too cold, so I kept pounding until I made it into New Mexico.

As the sun began to set, I knew I was too tired to make it all the way to Roswell, where I was hoping to be abducted by aliens. So, I pulled off on the side of the road at a rest stop and passed out, dreaming of what this next phase of my adventure would hold.
