The wind continued to batter the Jeep and the trailer as I headed it out of Saint Francis City Park in the morning. As always, I avoid interstates whenever possible. So, I headed through Atwood, Kansas, staying on two-lane highways.
Unfortunately, neither of the highways I was on had any shoulders and had a significant amount of oncoming semi-truck traffic. Within a couple of hours, I was rolling into Colby, Kansas, knowing that I would definitely need a break and totally want it out of the brutal wind.
I’ve driven by Colby at least 50 times, staying out on the interstate and stopping to get coffee at the Travel Oasis on I-70. I decided I really needed to find a local restaurant, and Como en casaCasa absolutely fit the bill.
The lady who helped me suggested I give the green enchiladas a try. She did not steer me wrong. They were fantastic. The green chili had just the right amount of heat and was completely full of flavor. the refried beans were obviously made in the house, as was the three salsas served with the tortilla chips.
